帶頭做文明餐飲的踐行者。服務公司餐飲分公司9月初發布《節約型食堂操作指南》,從采購管理、合理加工、科學烹飪、宣傳標語等方面強化內部監管,規范操作流程,把制止浪費精神貫穿于材料采購、加工制作、服務現場全過程。餐飲分公司運營21家食堂(服務集團4400人就餐)均實施“明廚亮灶”工程,著力提升食堂工作人員作業技能,強化加工、烹飪監管,開展每日食品原料用量、餐廚垃圾量等的定量分析及監測,并將結果納入廚房管理考核之中,從源頭上防止餐飲行業的浪費行為,牢固樹立過“緊日子”思想。

存在的不足:
一是個別公司“光盤行動”、“杜絕浪費”等宣傳標語不足。
二是少數公司仍有浪費現象存在。已通過采取半份飯、提供面食,張貼“少取、續取、不剩餐”勸導標語等方法予以整改。
三是個別公司食堂接待用餐程序執行還不夠規范,一些措施落實還不到位,具體工作有待進一步細化。
四、建立長效機制,形成制度約束
集團參照《黨政機關厲行節約反對浪費條例》《關于厲行節約反對食品浪費的意見》等規章制度,結合公司實際,嚴格執行相關工作制度。集團行政管理部進一步修訂《接待及調研管理》制度文件,增加“光盤行動”、“杜絕浪費”相關內容,將制止餐飲浪費工作納入節約型企業創建范圍。堂食提倡精細利用食材、推進源頭減量,提高計劃性;盒飯提倡小份菜、半份菜、半份飯,增加多樣性;接待餐提倡地方菜、家常菜,不鋪張、不攀比,嚴格遵守“N-1”點餐原則,增強規范性。就餐場所規定長期設置相關宣傳標語,酌情設立“光盤行動”勸導員,引導干部員工節約用餐。相關職能部門對分管后勤、食堂或財務等工作的負責人開展集中談話,壓緊壓實責任,督促加強內部管控,大力營造浪費可恥、節約為榮的企業氛圍。
